Since Tuesday, I’ve been experimenting making my own healthy ice cream sandwich. It was National Ice Cream Sandwich Day, and I didn’t have an ice cream sandwich in celebration.
I modified a recipe for homemade ice cream. It was so interesting to work with aquafaba–a fancy name for garbanzo bean water. I added half the sugar and no oil, so this was really a healthy recipe! I put a scoop on a graham cracker and enjoyed my ice cream sandwich a day late.
Today is National Chocolate Chip Cookie Day. I didn’t have one of those today, either. Maybe an ice cream sandwich on chocolate chip cookies will be my next experiment.

Denise, how inventive! You used ingredients on hand to experiment and create your own new twist on the ice cream sandwich – – a healthy version. I had looked SO forward all day to going to Dairy Queen with my husband for an after-dinner dessert date and having an ice cream sandwich. I thought I remembered that they sold them and that theirs were round, but there were none. So we settled for a cone and pretended. It was all okay, because the second best thing about Dairy Queen is that they keep it like a freezer in there – so cold you can’t see out the windows for all the condensation. In this extreme Georgia heat, that was almost as refreshing as the ice cream. Almost. Oooooh, I think I’m going to love your next experiment with the chocolate chip cookies.
